Lavender Honey Simple Syrup

I recently started making this lavender honey simple syrup to put in my afternoon oat milk latte, and it’s probably my favorite thing that I have all day.

I’m not usually into floral flavors, but several years ago, I took the recommendation from the barista at Spy House in Minneapolis to try their Spy Girl, a lavender honey latte, and I loved it so much that it's now my regular order there.

Something about the combination of the lavender and the honey gives it almost a Fruity Pebbles vibe? It's sweet, but not cloying, and this recipe is pretty similar in flavor to the Spy Girl of my heart, without the commute. 

 

 

Lavender Honey Simple Syrup

Ingredients:

  • 3TBS Lavender Buds (fresh or dried) 
  • 1C Honey
  • 1C Water

Instructions:

  1. In a small sauce pot over med-hi heat, bring all ingredients to a gentle boil, then reduce heat to a simmer. Simmer for 15min. 
  2. Remove from heat and let steep for 15-30min. 
  3. Strain into an airtight container and keep in the fridge for 4-6 weeks. Use 2-4TBS in coffee or use in place of simple syrup in cocktail and mocktail recipes 1:1.
